- 6 oz goat cheese
- 6 slices bacon (thin-cut)
- Olive oil (optional)

Instructions
- Preheat your oven to 375°F (190°C).
- Slice the dates lengthwise down one side and remove the pits.
- Stuff each date with goat cheese.
- Wrap each stuffed date with a half slice of bacon and secure with a toothpick.
- Position the wrapped dates on a baking sheet and drizzle with olive oil.
- Season lightly with salt and pepper.
- Bake for 15–20 minutes until the bacon is crispy and the dates are caramelized.
