- 2 cups vanilla wafer cookies, finely crushed
- 1/3 cup unsalted butter, melted
- 16 oz cream cheese, softened
- 2/3 cup granulated sugar
- 2 large eggs
- 2 medium ripe bananas, mashed
- 1 (3.4 oz) package instant banana pudding mix
- 1 cup cold milk
- 1 cup whipped topping
Instructions
- Preheat your oven to 325°F (163°C).
- Line your 9×9-inch baking dish with parchment paper, leaving some overhang.
- Mix the crushed vanilla wafer cookies with the melted butter until combined.
- Press the mixture evenly into the bottom of the prepared dish to form the crust.
- Beat the cream cheese and sugar together until smooth and creamy.
- Add the eggs, one at a time, mixing well after each addition.
- Stir in the mashed bananas gently, spreading the mixture evenly over the crust.
- Whisk together the banana pudding mix and cold milk for about 2 minutes, allow to thicken, and spread over the cream cheese mixture.
- Bake for 40 minutes or until the center is slightly set but still jiggly.
- Cool completely on a wire rack, then refrigerate for at least 2 hours.
- Top with whipped topping and slice into squares before serving.
Notes
Allow cream cheese to soften at room temperature for a smoother texture. A sprinkle of crushed vanilla wafers on top adds visual appeal.
