Description

A delightful merging of creamy cheesecake and sweet banana pudding, served as square bars for easy enjoyment.


Ingredients

  • 2 cups vanilla wafer cookies, finely crushed
  • 1/3 cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 2/3 cup granulated sugar
  • 2 large eggs
  • 2 medium ripe bananas, mashed
  • 1 (3.4 oz) package instant banana pudding mix
  • 1 cup cold milk
  • 1 cup whipped topping

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. Line your 9×9-inch baking dish with parchment paper, leaving some overhang.
  3. Mix the crushed vanilla wafer cookies with the melted butter until combined.
  4. Press the mixture evenly into the bottom of the prepared dish to form the crust.
  5. Beat the cream cheese and sugar together until smooth and creamy.
  6. Add the eggs, one at a time, mixing well after each addition.
  7. Stir in the mashed bananas gently, spreading the mixture evenly over the crust.
  8. Whisk together the banana pudding mix and cold milk for about 2 minutes, allow to thicken, and spread over the cream cheese mixture.
  9. Bake for 40 minutes or until the center is slightly set but still jiggly.
  10. Cool completely on a wire rack, then refrigerate for at least 2 hours.
  11. Top with whipped topping and slice into squares before serving.

Notes

Allow cream cheese to soften at room temperature for a smoother texture. A sprinkle of crushed vanilla wafers on top adds visual appeal.
