Description

A vibrant and flavorful dish featuring tender chicken in a creamy, spicy sauce served over rice with fresh vegetables.


Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
  • 1 tbsp olive oil
  • ½ tsp salt
  • ¼ tsp black pepper
  • ½ cup mayonnaise
  • 3 tbsp sweet chili sauce
  • 12 tsp sriracha (adjust to taste)
  • 1 tsp honey (optional)
  • 1 clove garlic, minced
  • 2 cups cooked white or brown rice
  • 1 cup shredded carrots
  • 1 cup cucumber, thinly sliced
  • 1 cup red cabbage, shredded
  • 2 green onions, sliced
  • Sesame seeds (optional, for garnish)
  • Fresh cilantro (optional, for garnish)

Instructions

  1. Heat the olive oil in a large skillet over medium heat. Season the chicken pieces with salt and black pepper. Cook until the chicken is golden brown and cooked through, about 6 to 8 minutes.
  2. While the chicken cooks, whisk together mayonnaise, sweet chili sauce, sriracha, honey, and minced garlic in a mixing bowl.
  3. Once the chicken is cooked, drizzle half of the Bang Bang sauce over it, tossing gently to coat the chicken.
  4. In a serving bowl, place a base of cooked rice, top with saucy chicken, followed by shredded carrots, cucumber, red cabbage, and green onions.
  5. Drizzle remaining Bang Bang sauce over the assembled bowl and garnish with sesame seeds and cilantro if desired.
  6. Serve immediately and enjoy the flavors!

Notes

Make-ahead tips: Marinate chicken in seasoning and sauce for deeper flavor. The sauce keeps well in the fridge for several days.
