Description

A comforting and versatile bowl featuring crispy chicken, fresh vegetables, and a homemade spicy mayo sauce.


Ingredients

  • 1 lb chicken breast, cut into bite-sized pieces
  • 1 cup all-purpose flour
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 2 tbsp sriracha sauce
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup sliced cucumbers
  • 1/2 cup shredded carrots
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. Season the chicken with salt and pepper.
  2. Dredge chicken pieces in flour, then dip in beaten eggs, and coat with panko breadcrumbs.
  3. Heat oil in a frying pan over medium heat and fry chicken until golden brown, about 6-8 minutes per side.
  4. For the Bang Bang Sauce, whisk together mayonnaise, sweet chili sauce, and sriracha.
  5. Assemble bowls with rice, topped with lettuce, cucumbers, carrots, and crispy chicken.
  6. Drizzle with Bang Bang Sauce and serve immediately.

Notes

For a healthier option, try cooking the chicken in an air fryer, and for meal prep, store chicken and sauce separately.
