- 1 cup mayonnaise
- ½ cup Thai sweet chili sauce
- 1 teaspoon Sriracha sauce
- 2 tablespoons honey
- 1 ½ pounds boneless, skinless chicken tenderloins
- 1 cup buttermilk
- ¾ cup all-purpose flour
- ½ cup cornstarch
- 1 large egg
- 1 tablespoon Sriracha sauce
- ½ teaspoon garlic powder
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ⅛ teaspoon cayenne pepper (optional)
- 2 cups plain panko breadcrumbs
- Canola oil (for frying)
- Chopped parsley (for garnish)
Instructions
- In a medium mixing bowl, combine mayonnaise, Thai sweet chili sauce, Sriracha sauce, and honey. Whisk until smooth and set aside.
- In a large mixing bowl, whisk together buttermilk, Sriracha sauce, garlic powder, salt, black pepper, and cayenne pepper. Add chicken, coat well, cover, and refrigerate for at least an hour.
- Combine all-purpose flour and cornstarch in a shallow dish. In another bowl, beat the egg.
- Remove chicken from marinade and dredge in flour-cornstarch mixture, dip in egg, then coat with panko breadcrumbs.
- Heat canola oil in a heavy-bottomed pot to 350°F. Fry chicken pieces in batches for 4-5 minutes on each side until golden brown.
- Drain on paper towels and toss with half of the Bang Bang sauce.
- Plate chicken, drizzle with remaining sauce, sprinkle with parsley, and serve hot.
Notes
For a healthier option, try baking or air frying the chicken instead of frying.
