- 2 cloves garlic, minced
- 1 onion, diced
- 1 teaspoon cumin

- Juice of 1 fresh lime
- Chopped cilantro for garnish
Instructions
- Drain and rinse the black beans.
- In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, sauté for 3-4 minutes until fragrant and soft.
- Sprinkle in cumin and paprika, toast for about 1 minute.
- Add the black beans, stir to combine, and season with salt and pepper.
- Let the mixture simmer for 5-7 minutes.
- Remove from heat and add lime juice and chopped cilantro.
- Serve in bowls, garnishing with additional cilantro if desired.
Notes
For added flavor, let the dish marinate overnight in the refrigerator. Customize by adding bell peppers or jalapeños for a spicy kick.
