Description

A delightful dish featuring tender chicken in a rich glaze of brown sugar, soy sauce, and pineapple, perfect for family dinners and gatherings.


Ingredients

  • 1.5 lbs boneless, skinless chicken breasts or thighs, cut into chunks
  • 1 can (20 oz) pineapple chunks with juice (do not drain)
  • ½ cup brown sugar (light or dark)
  • ⅓ cup low-sodium soy sauce
  • 2 tbsp rice vinegar
  • 1 tsp ground ginger (or 1 tbsp fresh grated)
  • 1 tbsp cornstarch
  • 2 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Red pepper flakes (optional, for heat)
  • Chopped green onions (optional garnish)

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. Toss the chicken pieces with salt, pepper, and garlic powder in a bowl.
  3. Heat olive oil over medium-high heat in a large skillet and add the seasoned chicken, browning for about 4 minutes.
  4. Whisk together brown sugar, soy sauce, pineapple juice, rice vinegar, ginger, and cornstarch until smooth.
  5. Transfer the browned chicken into the greased baking dish, add pineapple, and pour the glaze over the top.
  6. Cover with foil and bake for 25–30 minutes.
  7. Remove foil and bake for an additional 5–10 minutes until the sauce thickens and caramelizes.
  8. Let rest for 5 minutes before serving, garnished with green onions.

Notes

Can be made ahead by marinating the chicken in the glaze. For a quick option, try air frying the chicken at 375°F for 15 minutes.
