Description

Delight in these nostalgic chocolate-covered Rice Krispy treats featuring a gooey marshmallow center and a rich chocolate coating. Perfect for any occasion!


Ingredients

  • 6 tablespoons unsalted butter
  • 1 package (10 ounces) mini marshmallows
  • 6 cups Rice Krispies cereal
  • 1 ½ cups semisweet or dark chocolate chips
  • 1 teaspoon vegetable oil or coconut oil
  • ¼ teaspoon fine sea salt (optional)
  • 2 tablespoons rainbow sprinkles or chopped nuts (optional)

Instructions

  1. Prepare your pan: Lightly grease an 8″x8″ or 9″x9″ square baking pan, or line it with parchment paper for easy removal.
  2. Melt the butter: In a large saucepan over low heat, melt the butter, stirring continuously until fully melted.
  3. Add the marshmallows: Mix in the mini marshmallows and stir until melted and smooth.
  4. Season with salt: Remove from heat and stir in the fine sea salt, if using.
  5. Mix in the Rice Krispies: Fold in the Rice Krispies gently using a spatula.
  6. Transfer to the pan: Pour the mixture into the prepared pan and press it evenly into the corners.
  7. Cool down: Let it sit at room temperature for about 10 minutes.
  8. Prepare the chocolate: In a microwave-safe bowl, combine chocolate chips and oil, microwaving in 30-second intervals until melted and glossy.
  9. Spread the chocolate: Pour the melted chocolate over the Rice Krispy layer and spread evenly.
  10. Garnish: Add sprinkles or nuts if desired before the chocolate sets.
  11. Set the treats: Let sit for at least 1 hour or refrigerate for 20-30 minutes to set.
