- 1 can (13.5 oz) coconut milk
- 2 cups cooked rice
- 1 tablespoon vegetable oil (or coconut oil)
- 2 cloves garlic, minced

- 1 tablespoon soy sauce (or tamari for gluten-free)
- 1 teaspoon lime juice
- Salt and pepper to taste
- Fresh cilantro or green onions, for garnish

Instructions
- In a large skillet over medium heat, warm your choice of oil.
- Add diced chicken, seasoning gently with salt and pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken turns golden and is cooked through.
- Stir in the minced garlic and grated ginger, sautéing for just 1 minute until they release their fragrant aroma.
- Pour in coconut milk, soy sauce, and lime juice. Allow the mixture to simmer gently for 5–7 minutes, stirring occasionally until the sauce slightly thickens and envelops the chicken.
- As the chicken simmers, follow the package instructions to cook your chosen rice until fluffy and tender.
- Layer the creamy chicken over a warm bed of rice. Garnish with fresh cilantro or green onions, and add optional slices of avocado or a splash of hot sauce for extra flavor.
