Description

A vibrant Coconut Chicken Rice Bowl featuring tender chicken in a creamy coconut sauce, perfectly balanced with fragrant rice and fresh herbs.


Ingredients

  • 1 lb (450g) boneless, skinless chicken breasts, diced
  • 1 can (13.5 oz) coconut milk
  • 2 cups cooked rice
  • 1 tablespoon vegetable oil (or coconut oil)
  • 2 cloves garlic, minced
  • 1 teaspoon ginger, grated
  • 1 tablespoon soy sauce (or tamari for gluten-free)
  • 1 teaspoon lime juice
  • Salt and pepper to taste
  • Fresh cilantro or green onions, for garnish
  • Optional: Sliced avocado, lime wedges, hot sauce

Instructions

  1. In a large skillet over medium heat, warm your choice of oil.
  2. Add diced chicken, seasoning gently with salt and pepper. Cook for 5–7 minutes, stirring occasionally, until the chicken turns golden and is cooked through.
  3. Stir in the minced garlic and grated ginger, sautéing for just 1 minute until they release their fragrant aroma.
  4. Pour in coconut milk, soy sauce, and lime juice. Allow the mixture to simmer gently for 5–7 minutes, stirring occasionally until the sauce slightly thickens and envelops the chicken.
  5. As the chicken simmers, follow the package instructions to cook your chosen rice until fluffy and tender.
  6. Layer the creamy chicken over a warm bed of rice. Garnish with fresh cilantro or green onions, and add optional slices of avocado or a splash of hot sauce for extra flavor.

Notes

Prep the chicken and sauce in advance and store for up to two days. Reheat gently before serving.
