Description

A vibrant and refreshing corn salad packed with sweet corn, crunchy vegetables, and a zesty lime dressing.


Ingredients

  • 2 cups fresh sweet corn kernels (about 3 medium ears)
  • 1 cup red bell pepper, diced
  • 1 cup cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • 2 tablespoons lime juice (freshly squeezed)
  • 2 tablespoons extra virgin olive oil
  • Salt and pepper to taste

Instructions

  1. Shuck the corn and slice the kernels off the cob into a bowl.
  2. Dice the red bell pepper, cucumber, and red onion into small, uniform pieces.
  3. In a large mixing bowl, combine the corn, diced bell pepper, cucumber, red onion, and chopped cilantro.
  4. In a separate bowl, whisk together lime juice, olive oil, and a pinch of salt and pepper.
  5. Pour the dressing over the salad mixture and toss gently until coated.
  6. Cover and let the salad chill in the refrigerator for at least 30 minutes before serving.
