Instructions
- Shuck the corn and slice the kernels off the cob into a bowl.
- Dice the red bell pepper, cucumber, and red onion into small, uniform pieces.
- In a large mixing bowl, combine the corn, diced bell pepper, cucumber, red onion, and chopped cilantro.
- In a separate bowl, whisk together lime juice, olive oil, and a pinch of salt and pepper.
- Pour the dressing over the salad mixture and toss gently until coated.
- Cover and let the salad chill in the refrigerator for at least 30 minutes before serving.
