A vibrant stir fry featuring smoked sausage and fresh vegetables, perfect for a quick weeknight dinner or a fun weekend gathering.

- 1 lb smoked sausage, sliced into 1/2 inch rounds
- 4 medium Yukon gold potatoes, thinly sliced
- 1 medium zucchini, sliced into rounds
- 1 red bell pepper, chopped into bite-sized pieces
- 1 small onion, chopped
- 2 tbsp olive oil or cooking oil
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1 tsp black pepper
- 1 tsp salt (or to taste)
- 1/2 tsp crushed red pepper flakes (optional)
- 1/2 tsp dried oregano or Italian seasoning
Instructions
- Preheat your Blackstone griddle to medium-high heat and drizzle in 1 tablespoon of oil.
- Add the sliced potatoes to the griddle. Cook for 8-10 minutes, stirring occasionally, until golden brown and tender.
- Remove the potatoes from the griddle and set aside.
- Toss in the zucchini, bell pepper, and onion. Sauté for 5-6 minutes until softened and caramelized.
- Add the smoked sausage, heating through and developing a slight brown crust for about 4-5 minutes.
- Sprinkle with garlic powder, smoked paprika, black pepper, salt, and red pepper flakes. Stir to combine.
- Add the cooked potatoes back to the griddle and cook for another 2-3 minutes to meld flavors.
Notes
Customize the stir fry with different proteins or seasonal veggies. Avoid crowding the griddle for best results.
