- 1 cup fresh cranberries, chopped
- 1/2 cup granulated sugar
- 1/2 cup orange juice
- 1/4 cup unsalted butter, melted
- 1 large egg
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 tablespoon orange zest
Instructions
- Preheat the oven to 350°F (175°C) and grease mini loaf pans.
- In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
- In another bowl, whisk together the orange juice, melted butter, egg, and orange zest.
- Combine the wet ingredients with the dry ingredients until just mixed.
- Fold in the chopped cranberries gently.
- Pour the batter into the prepared mini loaf pans, filling each about 2/3 full.
- Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
- Let the loaves cool in the pans for 10 minutes before transferring to a wire rack to cool completely.
Notes
- For a sweeter loaf, consider adding more sugar or a glaze on top.
- These loaves can be frozen for up to 3 months.
- Feel free to substitute dried cranberries if fresh ones are not available.
