Ingredients

  • 1 1/2 cups all-purpose flour
  • 1 cup fresh cranberries, chopped
  • 1/2 cup granulated sugar
  • 1/2 cup orange juice
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon orange zest

Instructions

  1. Preheat the oven to 350°F (175°C) and grease mini loaf pans.
  2. In a large bowl, mix together the flour, sugar, baking powder, baking soda, and salt.
  3. In another bowl, whisk together the orange juice, melted butter, egg, and orange zest.
  4. Combine the wet ingredients with the dry ingredients until just mixed.
  5. Fold in the chopped cranberries gently.
  6. Pour the batter into the prepared mini loaf pans, filling each about 2/3 full.
  7. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
