Description

A warm and comforting crockpot chili, rich in spices and hearty flavors, perfect for gatherings and cozy nights in.


Ingredients

  • 1 lb ground beef
  • 1 medium onion (diced)
  • 3 cloves garlic (minced)
  • 15 oz kidney beans (drained)
  • 15 oz black beans (drained)
  • 28 oz crushed tomatoes
  • 14 oz diced tomatoes
  • 2 tbsp tomato paste
  • 2 cups beef broth
  • 2 tbsp chili powder
  • 1 tbsp ground cumin
  • 1 tsp smoked paprika
  • 0.5 tsp black pepper
  • 1 tsp salt (adjust to taste)
  • 0.5 tsp oregano
  • 1 tbsp brown sugar (optional)
  • Shredded cheese, sour cream, and green onions (for serving)

Instructions

  1. Brown the ground beef in a skillet over medium heat, then add the diced onion and minced garlic, cooking until softened (about 5 minutes).
  2. Drain any excess fat from the skillet.
  3. Transfer the beef mixture to the slow cooker.
  4. Add the kidney beans, black beans, crushed tomatoes, diced tomatoes, tomato paste, and beef broth to the slow cooker.
  5. Stir in spices: chili powder, cumin, smoked paprika, black pepper, salt, oregano, and brown sugar if using.
  6. Mix well and cover the slow cooker, cooking on LOW for 6–8 hours or HIGH for 3–4 hours.
  7. For a thicker chili, uncover the slow cooker during the last hour.
  8. Adjust seasoning before serving and garnish with shredded cheese, sour cream, and green onions.

Notes

Feel free to customize by adding vegetables like corn or zucchini, and adjust spices to taste.
