A delicious and customizable burrito filled with grilled chicken, fresh vegetables, and creamy chipotle ranch.

- Boneless, skinless chicken breasts or thighs
- ½ cup olive oil
- 3 cloves fresh garlic, minced
- 2 tablespoons fresh lime juice
- 1 tablespoon chipotle chili powder or adobo sauce
- 1 teaspoon smoked paprika
- 1 teaspoon ground cumin
- Salt and black pepper to taste
- 1 cup ranch dressing
- 2–3 chipotle peppers in adobo sauce
- 1 teaspoon garlic powder
- Fresh chopped tomatoes
- Diced red onion
- Fresh cilantro leaves
- Jalapeño slices or chopped green chili (optional)
- Lettuce or spinach (optional)
- Shredded cheese
- Sliced avocado or guacamole
- Cooked rice (white, brown, or cilantro-lime rice)
- Tortillas
Instructions
- Marinate the chicken by whisking together olive oil, lime juice, garlic, chipotle powder, smoked paprika, cumin, salt, and pepper in a mixing bowl. Add chicken and coat thoroughly. Marinate for at least 30 minutes or overnight.
- Preheat the grill to medium-high and grill the marinated chicken for 6-7 minutes per side until cooked through. Let it rest for 5 minutes, then slice.
- Prepare the chipotle ranch by blending ranch dressing, chipotle peppers, lime juice, and garlic powder until smooth.
- Warm tortillas on a skillet or in the microwave.
- Assemble the burrito by layering rice, sliced chicken, vegetables, cheese, and chipotle ranch on the tortilla.
- Wrap the tortilla tightly, then serve and enjoy!
Notes
Marinate chicken overnight for deeper flavor. Customize toppings as desired.
