Description

A delicious and customizable burrito filled with grilled chicken, fresh vegetables, and creamy chipotle ranch.


Ingredients

  • Boneless, skinless chicken breasts or thighs
  • ½ cup olive oil
  • 3 cloves fresh garlic, minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon chipotle chili powder or adobo sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon ground cumin
  • Salt and black pepper to taste
  • 1 cup ranch dressing
  • 23 chipotle peppers in adobo sauce
  • 1 teaspoon garlic powder
  • Fresh chopped tomatoes
  • Diced red onion
  • Fresh cilantro leaves
  • Jalapeño slices or chopped green chili (optional)
  • Lettuce or spinach (optional)
  • Shredded cheese
  • Sliced avocado or guacamole
  • Cooked rice (white, brown, or cilantro-lime rice)
  • Tortillas

Instructions

  1. Marinate the chicken by whisking together olive oil, lime juice, garlic, chipotle powder, smoked paprika, cumin, salt, and pepper in a mixing bowl. Add chicken and coat thoroughly. Marinate for at least 30 minutes or overnight.
  2. Preheat the grill to medium-high and grill the marinated chicken for 6-7 minutes per side until cooked through. Let it rest for 5 minutes, then slice.
  3. Prepare the chipotle ranch by blending ranch dressing, chipotle peppers, lime juice, and garlic powder until smooth.
  4. Warm tortillas on a skillet or in the microwave.
  5. Assemble the burrito by layering rice, sliced chicken, vegetables, cheese, and chipotle ranch on the tortilla.
  6. Wrap the tortilla tightly, then serve and enjoy!

Notes

Marinate chicken overnight for deeper flavor. Customize toppings as desired.
