Description

A cozy, flavor-packed breakfast burrito that combines breakfast sausage, eggs, cheese, and vibrant vegetables for a delightful morning meal.


Ingredients

  • 12 ounces breakfast sausage, crumbled
  • 6 large eggs, whisked (at room temperature)
  • 1 cup shredded cheddar cheese
  • 1/2 cup diced bell peppers (red and green)
  • 1/2 cup chopped onions (yellow or white)
  • 2 cloves minced garlic
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon smoked paprika
  • 1/4 cup fresh cilantro, chopped (optional)
  • Large flour tortillas (10-inch size)
  • Salsa or hot sauce (to serve or add inside)
  • Avocado slices or guacamole (optional)

Instructions

  1. Heat a large non-stick skillet over medium heat.
  2. Add the crumbled breakfast sausage and cook for about 7-8 minutes until browned.
  3. Remove the sausage and sauté diced onions and bell peppers in the same pan for 4-5 minutes.
  4. Add minced garlic and cook for an additional minute.
  5. Pour in the whisked eggs, season with salt, pepper and smoked paprika, and cook until softly set (3-4 minutes).
  6. Fold in the cooked sausage and shredded cheese until melted.
  7. Warm tortillas in a dry skillet for about 20 seconds per side.
  8. Assemble burritos by filling warm tortillas with the mixture and rolling tightly. Wrap in foil or parchment for storage.
