Garlic & Rosemary Focaccia Muffins are a delightful treat that combines the rich flavors of garlic and rosemary in a soft, fluffy muffin.
Ingredients

- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1 teaspoon salt
- 1/2 cup olive oil
- 1 cup warm water
- 2 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 1 tablespoon coarse sea salt (for topping)
Instructions
- Preheat the oven to 375°F (190°C) and grease a muffin tin.
- In a large bowl, mix together the flour, baking powder, and salt.
- In a separate bowl, combine the olive oil, warm water, minced garlic, and chopped rosemary.
- Pour the wet ingredients into the dry ingredients and stir until just combined.
- Spoon the batter into the prepared muffin tin, filling each cup about 2/3 full.
- Sprinkle coarse sea salt on top of each muffin.
- Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
- Let cool for a few minutes before removing from the tin.
Notes
- For a stronger garlic flavor, increase the amount of minced garlic.
- These muffins can be served warm or at room temperature.
- Store leftovers in an airtight container for up to 3 days.
