Ingredients

  • 1/2 cup almond butter
  • 1/4 cup honey or maple syrup
  • 1 tablespoon ground ginger
  • 1 tablespoon ground turmeric
  • 1/4 cup chia seeds
  • 1/4 cup shredded coconut
  • 1/4 cup chopped nuts (e.g., almonds or walnuts)
  • 1/2 teaspoon cinnamon
  • Pinch of salt

Instructions

  1. In a large bowl, combine rolled oats, almond butter, honey or maple syrup, ground ginger, ground turmeric, chia seeds, shredded coconut, chopped nuts, cinnamon, and salt.
  2. Mix all the ingredients until well combined.
  3. Using your hands, form the mixture into small balls, about 1 inch in diameter.
  4. Place the energy balls on a baking sheet lined with parchment paper.
  5. Refrigerate for at least 30 minutes to firm up.
  6. Store in an airtight container in the refrigerator for up to a week.
