- 1/2 cup almond butter
- 1/4 cup honey or maple syrup
- 1 tablespoon ground ginger
- 1 tablespoon ground turmeric
- 1/4 cup chia seeds
- 1/4 cup shredded coconut
- 1/4 cup chopped nuts (e.g., almonds or walnuts)
- 1/2 teaspoon cinnamon
- Pinch of salt
Instructions
- In a large bowl, combine rolled oats, almond butter, honey or maple syrup, ground ginger, ground turmeric, chia seeds, shredded coconut, chopped nuts, cinnamon, and salt.
- Mix all the ingredients until well combined.
- Using your hands, form the mixture into small balls, about 1 inch in diameter.
- Place the energy balls on a baking sheet lined with parchment paper.
- Refrigerate for at least 30 minutes to firm up.
- Store in an airtight container in the refrigerator for up to a week.
