Ingredients
Scale
- 1 lb steak (ribeye, flank, or sirloin)
- 2 cups fresh greens (mixed salad greens or arugula)
- 1 cup sweet corn (roasted or grilled)
- 1/2 cup gorgonzola cheese (crumbled)
- 1/4 cup balsamic glaze
- Salt and pepper to taste
- Olive oil for grilling
Instructions
- Preheat the grill to medium-high heat.
- Season the steak generously with salt, pepper, and a drizzle of olive oil.
- Grill the steak for about 5-7 minutes on each side, checking for doneness with a meat thermometer (135°F for medium-rare, 145°F for medium).
- Let the steak rest for 5 minutes to allow juices to redistribute.
- In a large bowl, combine fresh greens, roasted corn, and crumbled gorgonzola cheese.
- Slice the rested steak against the grain into supple strips.
- Assemble the salad by laying the sliced steak atop the greens and drizzling with balsamic glaze.
- Toss gently to combine and serve immediately.
Notes
Make-ahead tip: Marinate the steak a few hours before grilling for added flavor. This salad is versatile; feel free to customize with additional toppings like avocados or nuts.
