Description

A flavorful summer salad featuring grilled steak, fresh greens, sweet corn, and creamy gorgonzola, all drizzled with balsamic glaze.

Ingredients

Scale
  • 1 lb steak (ribeye, flank, or sirloin)
  • 2 cups fresh greens (mixed salad greens or arugula)
  • 1 cup sweet corn (roasted or grilled)
  • 1/2 cup gorgonzola cheese (crumbled)
  • 1/4 cup balsamic glaze
  • Salt and pepper to taste
  • Olive oil for grilling

Instructions

  1. Preheat the grill to medium-high heat.
  2. Season the steak generously with salt, pepper, and a drizzle of olive oil.
  3. Grill the steak for about 5-7 minutes on each side, checking for doneness with a meat thermometer (135°F for medium-rare, 145°F for medium).
  4. Let the steak rest for 5 minutes to allow juices to redistribute.
  5. In a large bowl, combine fresh greens, roasted corn, and crumbled gorgonzola cheese.
  6. Slice the rested steak against the grain into supple strips.
  7. Assemble the salad by laying the sliced steak atop the greens and drizzling with balsamic glaze.
  8. Toss gently to combine and serve immediately.

Notes

Make-ahead tip: Marinate the steak a few hours before grilling for added flavor. This salad is versatile; feel free to customize with additional toppings like avocados or nuts.
