Description

A vibrant salad bursting with flavor, featuring fresh broccoli, crispy bacon, tangy cranberries, and a creamy dressing.


Ingredients

  • 4 cups fresh broccoli florets
  • 1/2 cup red onion, diced
  • 1 cup crispy bacon, crumbled
  • 1/2 cup sunflower seeds
  • 1/2 cup dried cranberries
  • 1/2 cup Greek yogurt or mayo
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon honey
  • Salt and pepper, to taste

Instructions

  1. In a large mixing bowl, combine the fresh broccoli florets, diced red onion, crispy crumbled bacon, sunflower seeds, and dried cranberries.
  2. In a separate bowl, whisk together Greek yogurt (or mayo), apple cider vinegar, honey, salt, and pepper until smooth.
  3. Pour the dressing over the broccoli mixture and gently toss until evenly coated.
  4. Cover and chill in the refrigerator for at least 30 minutes to meld flavors.

Notes

For meal prep, keep the dressing separate until serving. Substitute bacon with crispy tempeh for a vegan option.
