Description

A delicious Hot Honey Chicken Bowl featuring tender marinated chicken, steamed broccoli, and fluffy jasmine rice, all glazed with a sweet and spicy honey sauce.


Ingredients

  • 1 pound boneless skinless chicken thighs, cut into bite-sized pieces
  • 1 tablespoon extra virgin olive oil
  • 1 tablespoon apple cider vinegar
  • 1 tablespoon low-sodium soy sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon cayenne pepper (adjust for heat preference)
  • Salt and freshly ground black pepper to taste
  • 2 tablespoons hot honey
  • 2 cups cooked jasmine rice or brown rice
  • 1 cup steamed broccoli florets
  • 1/2 cup corn kernels (fresh or thawed frozen)
  • 1/4 cup thinly sliced green onions
  • 1/4 cup chopped fresh cilantro
  • Lime wedges for serving
  • Optional toppings: sliced avocado, crushed red pepper flakes

Instructions

  1. In a small saucepan over medium heat, whisk together raw honey and crushed red pepper flakes for the hot honey. Simmer for about 2 minutes, then stir in apple cider vinegar and let steep for 10 minutes. Strain the liquid.
  2. In a medium bowl, mix olive oil, apple cider vinegar, soy sauce, smoked paprika, garlic powder, onion powder, cayenne, salt, and pepper. Add chicken, coat, cover, and marinate for 15 to 30 minutes.
  3. Prepare rice according to package instructions and keep warm.
  4. Steam broccoli florets for about 4 minutes until tender-crisp.
  5. Heat nonstick skillet over medium-high heat, add marinated chicken, and cook for 3 to 4 minutes on each side until golden brown. Transfer chicken to a plate.
  6. Reduce heat to low, return chicken to skillet, and drizzle with hot honey, tossing for another minute.
  7. Serve rice in bowls, topped with chicken, broccoli, corn, green onions, and cilantro. Add optional toppings and serve with lime wedges.

Notes

Marinate chicken overnight for enhanced flavor. This dish can easily be customized with different vegetables or proteins.
