Description

Indulge in savory keto-friendly zucchini boats wrapped in crispy bacon, filled with creamy cheddar and cream cheese.


Ingredients

Scale
  • 2 medium zucchinis
  • 4 ounces cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 4 slices bacon
  • Salt and pepper to taste
  • Optional: chopped green onions or herbs for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Cut the zucchinis in half lengthwise and scoop out the centers.
  3. Mix the cream cheese, cheddar cheese, salt, and pepper until well combined.
  4. Fill each zucchini boat with the cheese mixture.
  5. Wrap each stuffed zucchini half with a slice of bacon and secure with a toothpick if necessary.
  6. Place the zucchini boats on a baking sheet and bake for 25-30 minutes.
  7. Serve hot, garnished with green onions or herbs if desired.

Notes

You can prepare the zucchini boats up to a day in advance. If using an air fryer, cook at 375°F for 15-20 minutes.
