Description

Keto Crispy Reuben Roll-Ups are a delicious low-carb twist on the classic Reuben sandwich, featuring layers of corned beef, Swiss cheese, and sauerkraut wrapped in a crispy, keto-friendly shell.


Ingredients

  • 8 oz corned beef, sliced
  • 4 oz Swiss cheese, sliced
  • 1 cup sauerkraut, drained
  • 4 large lettuce leaves
  • 2 tbsp Dijon mustard
  • 1 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Lay out the lettuce leaves on a clean surface.
  3. Spread a thin layer of Dijon mustard on each lettuce leaf.
  4. Layer the corned beef, Swiss cheese, and sauerkraut on top of the mustard.
  5. Roll the lettuce leaves tightly to form roll-ups.
  6. Brush the outside of the roll-ups with olive oil and season with salt and pepper.
  7. Place the roll-ups on a baking sheet and bake for 10-12 minutes until crispy.
  8. Remove from the oven, let cool slightly, and slice in half before serving.

Notes

  • For extra flavor, add a sprinkle of caraway seeds before rolling.
  • These roll-ups can be served with additional mustard for dipping.
