Description

A savory and comforting dish featuring tender beef simmered in a rich broth, paired with noodles and vibrant vegetables, enhanced by gochujang and garlic.


Ingredients

  • 1 lb beef (chuck or brisket), cut into pieces
  • 4 cups beef broth
  • 8 oz noodles (udon or rice noodles)
  • 1 cup sliced carrots
  • 1 cup bell peppers, sliced
  • 1 onion, sliced
  • 3 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 tablespoon gochujang (Korean chili paste)
  • Salt and pepper to taste
  • Green onions for garnish

Instructions

  1. Combine beef, beef broth, garlic, soy sauce, sesame oil, and gochujang in a slow cooker.
  2. Add sliced carrots, bell peppers, and onion, stirring to mix.
  3. Cover and cook on low for 6-8 hours until beef is tender.
  4. About 30 minutes before serving, cook the noodles according to package instructions.
  5. Drain the noodles and serve topped with the beef and vegetable mixture.
  6. Garnish with sliced green onions before serving.

Notes

Make-ahead: Prepare beef mixture the night before and refrigerate for deeper flavor. You can also substitute with chicken or tofu for variety.
