- 4 cups beef broth
- 8 oz noodles (udon or rice noodles)

- 1 cup bell peppers, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- 1 tablespoon gochujang (Korean chili paste)
- Salt and pepper to taste
- Green onions for garnish
Instructions
- Combine beef, beef broth, garlic, soy sauce, sesame oil, and gochujang in a slow cooker.
- Add sliced carrots, bell peppers, and onion, stirring to mix.
- Cover and cook on low for 6-8 hours until beef is tender.
- About 30 minutes before serving, cook the noodles according to package instructions.
- Drain the noodles and serve topped with the beef and vegetable mixture.
- Garnish with sliced green onions before serving.
Notes
Make-ahead: Prepare beef mixture the night before and refrigerate for deeper flavor. You can also substitute with chicken or tofu for variety.
