- 1 tablespoon lemon zest (freshly grated)

- 3/4 cup warm water
- 1 tablespoon honey (for boiling)
Instructions
- Preheat the oven to 425°F (220°C).
- Combine the flour, baking powder, salt, sugar, poppy seeds, and lemon zest in a mixing bowl.
- Add the lemon juice and warm water to the dry ingredients. Mix until the dough begins to come together.
- Knead the dough until smooth and elastic, about 5-7 minutes.
- Divide the dough into 6 equal pieces and shape each into a bagel.
- Boil a large pot of water with honey, then gently place each bagel into the water. Boil for 1 minute on each side.
- Place each boiled bagel onto a baking sheet and bake for 20-25 minutes until golden brown.
- Cool slightly before serving.
Notes
For an even crispier bagel, flip them halfway during baking. You can customize with blueberries or nuts for added flavor.
