Description

These Light Cucumber Avocado Rolls encapsulate the essence of summer with their fresh flavors and delightful textures, making them a perfect appetizer or snack.


Ingredients

  • 1 large cucumber
  • 1 ripe avocado
  • Salt and pepper to taste
  • Fresh herbs (such as dill or cilantro), optional
  • Lemon juice, optional

Instructions

  1. Wash the cucumber and trim the ends. Use a vegetable peeler or mandoline to slice the cucumber into thin strips, aiming for a thickness of about 1/8 inch.
  2. Mash the ripe avocado in a mixing bowl until smooth. Season with salt and pepper, adding lemon juice if desired.
  3. Take a cucumber strip and place a generous spoonful of the mashed avocado mixture at one end.
  4. Gently roll the cucumber around the avocado, starting from the end with the filling.
  5. Secure the roll with a toothpick if it feels loose.
  6. Repeat until all cucumber strips and avocado mixture are used.
  7. Garnish with fresh herbs if desired and serve immediately.

Notes

Make-ahead tips: Prepare cucumber strips a few hours in advance and cover them with a damp paper towel. Mash the avocado just before serving to maintain freshness.
