- 1 pound lean beef stew meat
- 4 cups beef broth
- 3 carrots, sliced
- 2 potatoes, diced
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the beef stew meat to the pot and brown on all sides.
- Toss in the chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.
- Pour in the beef broth, stirring to incorporate any bits stuck to the bottom of the pot.
- Add the sliced carrots, diced potatoes, dried thyme, dried rosemary, salt, and pepper.
- Bring the mixture to a gentle simmer. Cover and reduce the heat to low, letting the stew bubble softly for about 90 to 120 minutes.
- Taste your stew and adjust the seasoning if necessary.
- Serve hot, garnished with a sprinkle of fresh parsley.
Notes
