Description

A comforting and nutritious Irish beef stew featuring tender beef and vibrant vegetables in a rich broth.


Ingredients

  • 1 pound lean beef stew meat
  • 4 cups beef broth
  • 3 carrots, sliced
  • 2 potatoes, diced
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the beef stew meat to the pot and brown on all sides.
  3. Toss in the chopped onion and minced garlic. Sauté until the onions are translucent, about 5 minutes.
  4. Pour in the beef broth, stirring to incorporate any bits stuck to the bottom of the pot.
  5. Add the sliced carrots, diced potatoes, dried thyme, dried rosemary, salt, and pepper.
  6. Bring the mixture to a gentle simmer. Cover and reduce the heat to low, letting the stew bubble softly for about 90 to 120 minutes.
  7. Taste your stew and adjust the seasoning if necessary.
  8. Serve hot, garnished with a sprinkle of fresh parsley.

Notes

This stew is perfect for freezing. Cool and store in an airtight container for up to 3 months. Reheat gently on the stovetop.
