Ingredients

  • 2 cups cooked chicken breast (shredded, or use rotisserie chicken)
  • 1 cup shredded mozzarella cheese
  • 1/2 cup shredded cheddar cheese
  • 2 cloves garlic (minced)
  • 1/4 cup cream cheese (softened)
  • 1 tablespoon olive oil
  • 4 large low-carb tortillas or wraps
  • 1 tablespoon fresh parsley (chopped)
  • Salt and pepper (to taste)
  • 1 handful baby spinach (optional)

Instructions

  1. Preheat a skillet or grill pan over medium heat and drizzle in the olive oil.
  2. Wrap tortillas in a damp paper towel and microwave for 10-15 seconds to make pliable.
  3. In a mixing bowl, combine shredded chicken, mozzarella cheese, cheddar cheese, softened cream cheese, minced garlic, and parsley. Season with salt and pepper.
  4. Distribute the chicken mixture evenly among the tortillas, placing about 1/2 cup of filling in each.
  5. Roll the tortillas tightly, tucking in the sides as you go.
  6. Place wraps seam-side down in the preheated skillet, cooking for 2-3 minutes on each side until golden-brown.
  7. Remove from skillet, cool slightly, and slice diagonally for serving.
  8. Sprinkle extra parsley over the top for garnish.
