Description

Delightful Mango Dessert Bars that combine ripe mango puree with a buttery crust for a refreshing summer treat.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 cup powdered sugar
  • 1 cup unsalted butter, softened
  • 3 cups ripe mango puree
  • 1/2 cup granulated sugar
  • 2 eggs
  • 1 tablespoon lime juice
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a 9×13 inch baking dish.
  2. Combine the flour and powdered sugar in a large bowl, then cut in the softened butter until the mixture resembles coarse crumbs.
  3. Press the mixture firmly into the bottom of the prepared baking dish.
  4. Bake for about 15-20 minutes until lightly golden and set.
  5. Whisk together the mango puree, granulated sugar, eggs, lime juice, vanilla extract, and salt until smooth.
  6. Pour the mango mixture over the baked crust and spread it evenly.
  7. Bake for an additional 25-30 minutes or until set.
  8. Allow the bars to cool completely before slicing.
  9. Serve as is or dust with powdered sugar.

Notes

These bars can be prepared in advance and stored in the fridge for enhanced flavor. Customize with shredded coconut or nuts for added texture.
