Description

Delicious mashed potato balls wrapped in crispy bacon with a gooey cheddar center, perfect as a snack or appetizer.


Ingredients

  • 2 cups cold mashed potatoes
  • 1 egg
  • Salt, to taste
  • Black pepper, to taste
  • ½ cup dry bread crumbs
  • Cheddar cheese, cut into 1-inch chunks
  • Bacon slices
  • Oil for frying (canola recommended)
  • Sour cream for dipping

Instructions

  1. Combine ingredients: In a large mixing bowl, combine the cold mashed potatoes, egg, salt, and pepper. Mix until everything is evenly incorporated.
  2. Scoop and shape: Use a spoon or ice cream scoop to take a generous scoop of potato mixture. Press it into your palm, wrap it around a chunk of cheddar cheese, and roll it into a ball.
  3. Coat with breadcrumbs: Roll each potato ball in the dry bread crumbs until fully coated.
  4. Wrap in bacon: Wrap a slice of bacon around the coated potato ball and secure with a toothpick.
  5. Heat the oil: Heat oil to 350°F (175°C) in a frying pan or deep fryer.
  6. Fry the bombs: Place 1-2 bombs into the hot oil, frying until golden brown on all sides, roughly 3-5 minutes.
  7. Drain and serve: Remove the bombs from the oil and drain on paper towels. Serve warm with sour cream for dipping.

Notes

You can prepare the bombs up to the frying stage and refrigerate them for a few hours before cooking. For baking, preheat oven to 425°F and bake for 20-25 minutes.
