Description

A vibrant and flavor-packed bowl featuring marinated sirloin steak, fresh veggies, and creamy tzatziki, perfect for a delightful dinner.


Ingredients

  • 3 tbsp olive oil
  • 2 garlic cloves (minced)
  • 1 tbsp lemon juice (fresh)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp salt
  • ¼ tsp black pepper
  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp lemon juice (fresh)
  • 1 garlic clove (minced)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp lemon juice (fresh; for vinaigrette)
  • 1 tsp honey (omit for Whole30; for vinaigrette)
  • 1 garlic clove (minced; for vinaigrette)
  • ½ tsp dried oregano (for vinaigrette)
  • salt & pepper (to taste)

Instructions

  1. Prepare the Marinade: In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak and marinate for at least 30 minutes to 4 hours.
  2. Craft Your Tzatziki: In a separate bowl, mix grated cucumber, Greek yogurt, lemon juice, minced garlic, and fresh dill. Season with salt and pepper. Cover and chill in the fridge.
  3. Whisk the Vinaigrette: Whisk together olive oil, lemon juice, honey (if using), minced garlic, dried oregano, and a sprinkle of salt and pepper.
  4. Sear the Steak: Heat skillet or grill pan over medium-high heat. Sear marinated steak for 4-5 minutes on each side for medium-rare. Allow to rest for 10 minutes, then slice thinly against the grain.
  5. Assemble Your Bowl: Layer cooked grains at the bottom, followed by sliced steak, cherry tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki and vinaigrette.

Notes

Marinate steak a day in advance for deeper flavor. Chill tzatziki to enhance refreshing quality.
