- ½ cup kalamata olives (pitted)
- ⅓ cup feta cheese (crumbled; optional)
- ¼ cup fresh herbs (parsley or dill, chopped)
- 1 cup Greek yogurt (plain; coconut yogurt for dairy-free)
- ½ cucumber (grated, squeezed dry)
- 1 tbsp lemon juice (fresh)
- 1 garlic clove (minced)
- 1 tbsp fresh dill (chopped)
- 3 tbsp olive oil (for vinaigrette)
- 2 tbsp lemon juice (fresh; for vinaigrette)
- 1 tsp honey (omit for Whole30; for vinaigrette)
- 1 garlic clove (minced; for vinaigrette)
- ½ tsp dried oregano (for vinaigrette)

Instructions
- Prepare the Marinade: In a mixing bowl, combine olive oil, minced garlic, lemon juice, oregano, thyme, salt, and black pepper. Coat the sirloin steak and marinate for at least 30 minutes to 4 hours.
- Craft Your Tzatziki: In a separate bowl, mix grated cucumber, Greek yogurt, lemon juice, minced garlic, and fresh dill. Season with salt and pepper. Cover and chill in the fridge.
- Whisk the Vinaigrette: Whisk together olive oil, lemon juice, honey (if using), minced garlic, dried oregano, and a sprinkle of salt and pepper.
- Sear the Steak: Heat skillet or grill pan over medium-high heat. Sear marinated steak for 4-5 minutes on each side for medium-rare. Allow to rest for 10 minutes, then slice thinly against the grain.
- Assemble Your Bowl: Layer cooked grains at the bottom, followed by sliced steak, cherry tomatoes, cucumber, red onion, olives, and feta. Drizzle with tzatziki and vinaigrette.
Notes
Marinate steak a day in advance for deeper flavor. Chill tzatziki to enhance refreshing quality.
