Description

A delicious and refreshing no-bake dessert made with mango and passionfruit, perfect for warm weather.


Ingredients

  • 1 cup of crushed digestive biscuits
  • 1/2 cup of unsweetened shredded coconut
  • 1/2 cup of melted butter
  • 1 cup of cream cheese, softened
  • 1/2 cup of powdered sugar
  • 1 cup of mango puree
  • 1/2 cup of passionfruit pulp
  • 1 cup of whipped cream

Instructions

  1. In a bowl, combine crushed digestive biscuits and shredded coconut.
  2. Add melted butter and mix until well combined.
  3. Press the mixture into the base of a lined baking dish to form the crust.
  4. In another bowl, beat the cream cheese and powdered sugar until smooth.
  5. Add mango puree and passionfruit pulp, mixing until well combined.
  6. Fold in the whipped cream gently until fully incorporated.
  7. Pour the mango and passionfruit mixture over the crust and spread evenly.
  8. Refrigerate for at least 4 hours or until set.
  9. Slice and serve chilled, garnished with extra mango or passionfruit if desired.
