- 1 cup of crushed digestive biscuits
- 1/2 cup of unsweetened shredded coconut
- 1/2 cup of melted butter
- 1 cup of cream cheese, softened
- 1/2 cup of powdered sugar
- 1 cup of mango puree
- 1/2 cup of passionfruit pulp
- 1 cup of whipped cream
Instructions
- In a bowl, combine crushed digestive biscuits and shredded coconut.
- Add melted butter and mix until well combined.
- Press the mixture into the base of a lined baking dish to form the crust.
- In another bowl, beat the cream cheese and powdered sugar until smooth.
- Add mango puree and passionfruit pulp, mixing until well combined.
- Fold in the whipped cream gently until fully incorporated.
- Pour the mango and passionfruit mixture over the crust and spread evenly.
- Refrigerate for at least 4 hours or until set.
- Slice and serve chilled, garnished with extra mango or passionfruit if desired.
Notes
- For a vegan version, substitute cream cheese and whipped cream with plant-based alternatives.
- Make sure to use ripe mangoes for the best flavor.
- This dessert can be made a day in advance for convenience.
