- 1 lb smoked sausage
- 12 oz penne pasta
- 2 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, diced
- 1 bell pepper, diced
- 3 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 tbsp Cajun seasoning
- 1 tsp paprika
- Salt and pepper to taste
- 1 cup grated Parmesan cheese for garnish
- 2 tbsp olive oil
Instructions
- Heat the olive oil in a large pot over medium heat, until it shimmers.
- Add the sliced sausage, onion, and bell pepper. Sauté for about 5–7 minutes until the sausage is golden and vegetables soften.
- Stir in the minced garlic and cook for an additional minute.
- Pour in the diced tomatoes, chicken broth, and heavy cream. Add Cajun seasoning, paprika, salt, and pepper, and stir to combine. Bring to a gentle boil.
- Add the uncooked penne pasta, reduce heat to a simmer, and cook for 10–12 minutes until the pasta absorbs flavors and becomes tender.
- Remove from heat and stir in grated Parmesan cheese until melted.
Notes
For added nutrients, consider adding fresh spinach or kale in the last few minutes of cooking. Pair with garlic bread or a fresh green salad for a complete meal.
