- 1 cup ricotta cheese
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 tablespoon fresh orange zest
- 1 teaspoon vanilla extract
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup diced peaches (fresh or canned)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Beat together the ricotta cheese, softened butter, and granulated sugar using an electric mixer until smooth and creamy.
- Add in the egg, orange zest, and vanilla extract. Blend until well combined.
- Whisk together the all-purpose flour, baking powder, and salt in another bowl, then gradually fold this mixture into the wet ingredients.
- Fold in the diced peaches gently.
- Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them out.
- Bake for 12-15 minutes, or until the edges are lightly golden.
- Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.
