Description

Delicious cookies combining the creamy richness of ricotta with juicy peaches and a burst of orange zest.


Ingredients

  • 1 cup ricotta cheese
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 1 large egg
  • 1 tablespoon fresh orange zest
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 cup diced peaches (fresh or canned)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Beat together the ricotta cheese, softened butter, and granulated sugar using an electric mixer until smooth and creamy.
  3. Add in the egg, orange zest, and vanilla extract. Blend until well combined.
  4. Whisk together the all-purpose flour, baking powder, and salt in another bowl, then gradually fold this mixture into the wet ingredients.
  5. Fold in the diced peaches gently.
  6. Drop spoonfuls of the cookie dough onto the prepared baking sheet, spacing them out.
  7. Bake for 12-15 minutes, or until the edges are lightly golden.
  8. Cool the cookies on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

These cookies are freezer-friendly. Freeze dough balls and bake straight from the freezer.
