Description

Delicious pancake muffins that combine the joy of pancakes with the convenience of muffins, customizable with six flavorful toppings.


Ingredients

  • 2 cups all-purpose flour
  • 3 1/2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 tablespoon sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tablespoons butter, melted
  • 1 teaspoon vanilla extract
  • 1/4 cup blueberries
  • 1/4 cup chocolate chips
  • 1/4 cup diced strawberries
  • 1/4 cup chopped nuts (walnuts or pecans)
  • 1/4 cup diced bananas
  • 1/4 cup shredded coconut
  • 1/4 cup raisins
  • 1/4 cup diced apples

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare your muffin tin.
  2. In a large bowl, sift together the flour, baking powder, salt, and sugar.
  3. In another bowl, whisk together the milk, egg, melted butter, and vanilla extract.
  4. Gently pour the wet mixture into the dry mixture and stir just until combined.
  5. Divide the batter evenly among the muffin cups, filling each about 2/3 full.
  6. Sprinkle your chosen toppings onto each muffin and lightly press them into the batter.
  7. Bake for 15-20 minutes until golden brown and a toothpick inserted comes out clean.
  8. Allow to cool in the pan for 5 minutes before transferring to a cooling rack.

Notes

Consider adding a drizzle of maple syrup or glaze over the muffins after cooling for an indulgent touch.
