Description
Deliciously nostalgic Protein Pop Tarts made with whole wheat flour and vanilla protein powder, filled with strawberry jam and topped with a creamy glaze.

- 1 1/2 cups whole wheat flour
- 1/2 cup vanilla protein powder
- 1 tablespoon sugar
- 2 teaspoons baking powder
- 1/4 cup applesauce
- 1/4 cup neutral-flavored oil
- 1 teaspoon vanilla extract
- 1/2 cup strawberry jam
- 1 cup confectioners sugar
- 2 tablespoons milk or water
- 1/2 teaspoon vanilla extract (for glaze)
Instructions
- Preheat the oven at 170°C (325°F) and line a baking tray with parchment paper.
- Combine dry ingredients in a medium bowl: whole wheat flour, protein powder, sugar, and baking powder.
- Mix wet ingredients in another bowl: applesauce, neutral oil, and vanilla extract until smooth.
- Create the dough by pouring the wet mixture into the dry ingredients and mixing until cohesive.
- Chill the dough by wrapping it in plastic wrap and refrigerating for 15 minutes.
- Roll the dough into 1/8-inch thickness and cut into 8 rectangles.
- Fill half of the rectangles with strawberry jam and seal with remaining rectangles.
- Bake for 10-15 minutes until golden brown and cool on a wire rack.
- Prepare glaze by whisking confectioners sugar, milk, and vanilla until smooth.
- Glaze the cooled tarts and let set at room temperature before serving.
Notes
Make ahead by preparing the dough the night before. Experiment with different jams or add chocolate chips for variation.
