- 1 pound shrimp, peeled and deveined
- 1 pound smoked sausage, sliced
- 1 cup long-grain rice
- 3 cups chicken broth
- 1 onion, diced
- 1 green bell pepper, diced
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1 teaspoon black pepper
- ½ teaspoon salt (to taste)
- 2 tablespoons olive oil
- 2 green onions, sliced (for garnish)
- Fresh parsley, chopped (for garnish)
Instructions
- In a large skillet over medium heat, add olive oil.
- Introduce the sliced smoked sausage and sauté until browned, about 5 minutes.
- Add the diced onion, bell pepper, and celery; cook for an additional 4-5 minutes, stirring frequently.
- Stir in the minced garlic, Cajun seasoning, thyme, black pepper, and salt; sauté for about a minute until fragrant.
- Pour in the rice and stir well to coat it with flavors.
- Slowly add the chicken broth; bring to a boil.
- Once boiling, reduce heat, cover, and simmer for about 20 minutes.
- Gently fold in the shrimp and cook for an additional 5 minutes or until shrimp are pink and curled.
- Taste and adjust seasoning as necessary.
- Remove from heat, let rest for a couple of minutes, then fluff rice with a fork and garnish with green onions and parsley.
Notes
Ensure shrimp is fresh or properly thawed if using frozen. Adjust Cajun seasoning to taste.
