- 1 lb Ground Beef or Turkey
- 2 cups Fresh Spinach
- 4 cloves Garlic, minced
- 1 small Onion (optional), finely chopped
- 1 large Egg
- 1 cup Breadcrumbs
- 1/2 cup Grated Parmesan Cheese
- 8 oz Low-Moisture Mozzarella Cubes
- 1 tbsp Italian Seasoning
- Salt and Pepper, to taste
- 1/2 tsp Red Pepper Flakes
- 1 tbsp Chopped Parsley
Instructions
- Sauté the Spinach: Heat olive oil in a skillet over medium heat, add spinach and salt, sauté for 2-3 minutes, then let cool and chop.
- Prepare the Mixture: In a mixing bowl, combine ground meat, sautéed spinach, garlic, onion (if using), egg, breadcrumbs, Parmesan, Italian seasoning, salt, pepper, and red pepper flakes. Mix until just combined.
- Add Cheese: Fold in mozzarella cubes gently.
- Shape the Meatballs: Wet hands slightly, form mixture into golf ball-sized meatballs, and place on a lined baking sheet.
- Bake: Preheat oven to 400°F (200°C) and bake meatballs for 20-25 minutes until golden-brown and internal temperature reaches 160°F (70°C).
- Serve Warm: Let rest for a few minutes and serve with marinara sauce or your favorite dipping sauce.
Notes
For make-ahead tips, prepare the meatballs the night before and store them uncooked in the fridge. For quicker cooking, try an air fryer.
