Description

A vibrant and flavorful steak burrito bowl featuring tender flank steak, fluffy rice, and fresh toppings, perfect for any occasion.


Ingredients

  • 1 lb flank steak
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • 1 cup white or brown rice
  • 2 cups water
  • 1 cup black beans, drained and rinsed
  • 1 cup corn kernels
  • 1 cup diced tomatoes
  • 1/2 cup diced red onion
  • 1/4 cup chopped fresh cilantro
  • 1 lime, juiced
  • 1 avocado, sliced
  • 1/2 cup shredded cheese (cheddar or Monterey Jack)
  • Sour cream and salsa for serving (optional)

Instructions

  1. In a small mixing bowl, combine olive oil, minced garlic, ground cumin, chili powder, salt, and pepper. Rub this mixture all over the flank steak and let it marinate for at least 30 minutes.
  2. In a medium saucepan, bring 2 cups of water to a boil. Add rice, lower heat to a simmer, cover, and allow to cook for 18-20 minutes or until tender. Fluff with a fork afterward.
  3. Preheat your grill or grill pan over medium-high heat. Grill the marinated steak for 4-5 minutes per side until desired doneness. Let it rest for 5 minutes before slicing thinly against the grain.
  4. In a large bowl, toss together the cooked rice, black beans, corn, diced tomatoes, red onion, cilantro, and the lime juice until well combined.
  5. Divide the rice mixture into serving bowls. Top each bowl with sliced steak, avocado, and shredded cheese. Add sour cream or salsa if desired.
  6. Serve immediately and enjoy!

Notes

For a healthier option, substitute white rice with cauliflower rice or use skirt steak or chicken instead of flank steak.
