This vibrant cherry tomato jam combines sweet and smoky flavors for a unique spread that enhances any dish.

- 2 tablespoons olive oil
- 1 small onion, diced
- 4 cloves garlic, minced
- 2 teaspoons smoked paprika
- ¼ teaspoon crushed red pepper flakes
- 5 cups (4 pints) cherry tomatoes
- ½ cup water
- ¼ cup apple cider vinegar (preferably organic)
- ¼ cup dark brown sugar
- 2 sprigs fresh thyme
- 2 teaspoons kosher salt
- 1 teaspoon freshly ground black pepper
Instructions
- Sauté the olive oil in a large soup pot or Dutch oven over medium heat. Add the diced onions and sauté for about 5 minutes until they’ve softened and become translucent.
- Stir in the garlic, smoked paprika, and crushed red pepper flakes. Cook for approximately 30 seconds, allowing the spices to release their intoxicating aromas.
- Add the cherry tomatoes, water, apple cider vinegar, brown sugar, thyme, salt, and black pepper to the pot. Bring the mixture to a vigorous boil over high heat.
- Reduce the heat to low, allowing it to simmer gently for 25-30 minutes. Stir occasionally to prevent sticking until the jam thickens and achieves a jammy consistency.
- Remove the thyme sprigs, discarding them as you do. Allow the jam to cool before transferring it into airtight glass jar(s), where it can rest in your refrigerator for up to two weeks.
