Description

A delightful combination of sweet mango and savory soy sauce transforms chicken into a gourmet experience with every bite.


Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup mango puree
  • 1/4 cup soy sauce
  • 2 tablespoons honey
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 2 cloves garlic, minced
  • 1 inch ginger, grated
  • Salt and pepper to taste
  • Green onions for garnish
  • Sesame seeds for garnish

Instructions

  1. Preheat the oven to 400°F (200°C) or heat a skillet over medium-high heat.
  2. Prepare the marinade by combining mango puree, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a mixing bowl and whisking until smooth.
  3. Marinate the chicken breasts with salt and pepper, then submerge them in the marinade for at least 30 minutes.
  4. Cooking options: For baking, place the marinated chicken on a baking sheet and bake for 25-30 minutes until fully cooked. For searing, add to a skillet and sear for 6-7 minutes on each side.
  5. Rest the chicken for a few minutes after cooking before slicing.
  6. Garnish with chopped green onions and sesame seeds before serving.

Notes

For best flavor, marinate the chicken a day in advance. Serve with jasmine rice or stir-fried vegetables for a complete meal.
