- 4 chicken breasts, boneless and skinless
- 1 cup mango puree
- 1/4 cup soy sauce
- 2 tablespoons honey
- 2 tablespoons rice vinegar
- 1 tablespoon sesame oil
- 2 cloves garlic, minced
- 1 inch ginger, grated
- Salt and pepper to taste
- Green onions for garnish
- Sesame seeds for garnish
Instructions
- Preheat the oven to 400°F (200°C) or heat a skillet over medium-high heat.
- Prepare the marinade by combining mango puree, soy sauce, honey, rice vinegar, sesame oil, garlic, and ginger in a mixing bowl and whisking until smooth.
- Marinate the chicken breasts with salt and pepper, then submerge them in the marinade for at least 30 minutes.
- Cooking options: For baking, place the marinated chicken on a baking sheet and bake for 25-30 minutes until fully cooked. For searing, add to a skillet and sear for 6-7 minutes on each side.
- Rest the chicken for a few minutes after cooking before slicing.
- Garnish with chopped green onions and sesame seeds before serving.
Notes
For best flavor, marinate the chicken a day in advance. Serve with jasmine rice or stir-fried vegetables for a complete meal.
