Description

A vibrant Thai Chicken Salad packed with fresh veggies, juicy chicken, and a creamy peanut dressing that elevates the flavors.


Ingredients

  • 2 cups crispy cabbage, shredded
  • 2 cups cooked shredded chicken
  • 1/2 cup crunchy peanuts, chopped
  • 1/4 cup homemade peanut dressing
  • 1/2 red bell pepper, sliced
  • 1/4 cup carrots, shredded
  • 1/4 cup green onions, chopped
  • 1 tablespoon lime juice
  • Salt and pepper to taste

Instructions

  1. In a large mixing bowl, combine the shredded cabbage and cooked chicken.
  2. Gently fold in the chopped peanuts, sliced bell pepper, shredded carrots, and chopped green onions.
  3. In a smaller bowl, whisk together the homemade peanut dressing and lime juice until smooth.
  4. Pour the dressing over the salad mix, tossing to coat everything evenly.
  5. Add salt and pepper to taste and serve immediately or let chill in the refrigerator.

Notes

For a make-ahead option, chop vegetables and shred chicken in advance. Store dressing separately to preserve crunch.
