- 6 large eggs
- 1 cup whole milk
- 1 cup shredded sharp cheddar cheese
- 1 cup cooked bacon, crumbled
- 2 cups smashed potatoes (for the crust)
- Salt and pepper to taste
- Chopped chives or parsley for garnish
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a 9-inch pie dish and press the smashed potatoes into the bottom and up the sides to form a crust.
- Whisk together the eggs and milk until frothy.
- Add shredded cheddar cheese and crumbled bacon, and season with salt and pepper.
- Pour the mixture into the potato crust.
- Bake for 30-35 minutes, or until set and golden brown on top.
- Cool slightly and garnish with chives or parsley.
- Slice and serve warm.
Notes
Assemble the quiche the day before and store in the refrigerator; bake fresh the next day.
