Delicious baked salmon meatballs paired with a creamy avocado sauce, perfect for gatherings or family dinners.

- 1 lb fresh salmon fillets
- 1/2 cup breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh parsley
- 1 egg
- 1 clove garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 avocado
- 1 tablespoon lemon juice
- 1/4 cup Greek yogurt or sour cream
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Prepare the salmon by pulsing the fillets in a food processor until finely chopped.
- Combine the chopped salmon with breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper in a mixing bowl.
- Form the mixture into meatballs, about 1.5 inches in diameter, and place on a prepared baking sheet.
- Bake for 15-20 minutes until cooked through and golden-brown.
- Make the avocado sauce by blending avocado, lemon juice, Greek yogurt (or sour cream), and salt and pepper until smooth.
- Serve the meatballs warm with the avocado sauce.
Notes
You can prepare the meatball mixture a day in advance and bake when ready to serve. They freeze well, too.
