Description

Delicious baked salmon meatballs paired with a creamy avocado sauce, perfect for gatherings or family dinners.


Ingredients

  • 1 lb fresh salmon fillets
  • 1/2 cup breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 egg
  • 1 clove garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 avocado
  • 1 tablespoon lemon juice
  • 1/4 cup Greek yogurt or sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Prepare the salmon by pulsing the fillets in a food processor until finely chopped.
  3. Combine the chopped salmon with breadcrumbs, Parmesan cheese, parsley, egg, minced garlic, salt, and pepper in a mixing bowl.
  4. Form the mixture into meatballs, about 1.5 inches in diameter, and place on a prepared baking sheet.
  5. Bake for 15-20 minutes until cooked through and golden-brown.
  6. Make the avocado sauce by blending avocado, lemon juice, Greek yogurt (or sour cream), and salt and pepper until smooth.
  7. Serve the meatballs warm with the avocado sauce.

Notes

You can prepare the meatball mixture a day in advance and bake when ready to serve. They freeze well, too.
