Description

Delightful cookies that blend the rich flavors of traditional carrot cake with a chewy cookie texture, featuring warm spices and butterscotch chips.


Ingredients

  • 1 cup all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 cup unsalted butter, softened
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup grated carrots
  • 1/2 cup rolled oats
  • 1/2 cup butterscotch chips

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
  4. In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
  5. Add the egg and vanilla extract to the butter mixture and blend well.
  6. Gradually mix the dry ingredients into the wet ingredients until just incorporated.
  7. Fold in the grated carrots, rolled oats, and butterscotch chips.
  8. Scoop tablespoonfuls of dough onto your prepared baking sheet, spacing them about 2 inches apart.
  9. Bake for 10-12 minutes until the edges are golden brown.
  10. Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.

Notes

You can prepare the dough a day in advance and keep it covered in the fridge to intensify flavors.
