- 1 cup grated carrots
- 1/2 cup rolled oats

Instructions
- Preheat your oven to 350°F (175°C).
- Line a baking sheet with parchment paper.
- In a mixing bowl, whisk together the flour, baking soda, baking powder, salt, cinnamon, and nutmeg.
- In another bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Add the egg and vanilla extract to the butter mixture and blend well.
- Gradually mix the dry ingredients into the wet ingredients until just incorporated.
- Fold in the grated carrots, rolled oats, and butterscotch chips.
- Scoop tablespoonfuls of dough onto your prepared baking sheet, spacing them about 2 inches apart.
- Bake for 10-12 minutes until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for 5 minutes before transferring to a wire rack.
Notes
You can prepare the dough a day in advance and keep it covered in the fridge to intensify flavors.
