Description

A delicious blend of tender chicken, zesty lemon, and tangy capers tossed with pasta, creating a delightful Italian experience.


Ingredients

  • 8 oz pasta (spaghetti or fettuccine)
  • 2 chicken breasts (boneless)
  • 1/4 cup flour
  • 2 tbsp olive oil
  • 1/2 cup chicken broth
  • 1/4 cup lemon juice
  • 1/4 cup capers
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Parsley for garnish

Instructions

  1. Cook the pasta: Fill a large pot with water, add salt, and bring to a boil. Cook pasta until al dente, about 8-10 minutes. Drain and toss with olive oil.
  2. Prepare the chicken: Season chicken breasts with salt and pepper, dust with flour.
  3. Sear the chicken: In a skillet, heat olive oil over medium heat. Cook chicken for 5-7 minutes on each side until golden brown. Remove chicken and let rest.
  4. Create the sauce: Sauté garlic in the skillet, add chicken broth and lemon juice, scraping up brown bits.
  5. Incorporate capers: Stir in capers and simmer for a few minutes.
  6. Combine with pasta: Add drained pasta to sauce, tossing to coat.
  7. Slice & serve: Thinly slice chicken and arrange it on pasta. Garnish with parsley.

Notes

You can prepare the sauce a day in advance. Use vegetable broth for a vegetarian option.
