- 2 chicken breasts (boneless)
- 1/4 cup flour
- 2 tbsp olive oil
- 1/2 cup chicken broth
- 1/4 cup lemon juice
- 1/4 cup capers
- 2 cloves garlic, minced
- Salt and pepper to taste
- Parsley for garnish
Instructions
- Cook the pasta: Fill a large pot with water, add salt, and bring to a boil. Cook pasta until al dente, about 8-10 minutes. Drain and toss with olive oil.
- Prepare the chicken: Season chicken breasts with salt and pepper, dust with flour.
- Sear the chicken: In a skillet, heat olive oil over medium heat. Cook chicken for 5-7 minutes on each side until golden brown. Remove chicken and let rest.
- Create the sauce: Sauté garlic in the skillet, add chicken broth and lemon juice, scraping up brown bits.
- Incorporate capers: Stir in capers and simmer for a few minutes.
- Combine with pasta: Add drained pasta to sauce, tossing to coat.
- Slice & serve: Thinly slice chicken and arrange it on pasta. Garnish with parsley.

You can prepare the sauce a day in advance. Use vegetable broth for a vegetarian option.
