Description

A flavorful dish featuring roasted chicken thighs glazed in a spicy chipotle honey sauce paired with creamy smoked Gouda mashed potatoes.


Ingredients

  • 4 chicken thighs
  • 2 tablespoons chipotle honey sauce
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • 2 cups potatoes, peeled and cubed
  • 1/2 cup milk
  • 1/4 cup smoked Gouda cheese, shredded
  • Butter to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine the chipotle honey sauce, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
  3. Coat each chicken thigh with the marinade and place them skin-side up in a baking dish.
  4. Bake the chicken for about 25-30 minutes, until the internal temperature reaches 165°F (75°C).
  5. Boil a pot of salted water and add the cubed potatoes, cooking until tender (about 15 minutes).
  6. Drain the potatoes and return them to the pot, then mash with milk and butter.
  7. Stir in the shredded smoked Gouda until fully melted.
  8. Serve the chicken alongside the mashed potatoes, drizzling with any leftover sauce.

Notes

Marinate the chicken a few hours or overnight for best flavor. Use parsley or cilantro for garnish.
