- 4 chicken thighs
- 2 tablespoons chipotle honey sauce
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 2 cups potatoes, peeled and cubed
- 1/2 cup milk
- 1/4 cup smoked Gouda cheese, shredded
- Butter to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Combine the chipotle honey sauce, smoked paprika, garlic powder, salt, and pepper in a mixing bowl.
- Coat each chicken thigh with the marinade and place them skin-side up in a baking dish.
- Bake the chicken for about 25-30 minutes, until the internal temperature reaches 165°F (75°C).
- Boil a pot of salted water and add the cubed potatoes, cooking until tender (about 15 minutes).
- Drain the potatoes and return them to the pot, then mash with milk and butter.
- Stir in the shredded smoked Gouda until fully melted.
- Serve the chicken alongside the mashed potatoes, drizzling with any leftover sauce.
Notes
Marinate the chicken a few hours or overnight for best flavor. Use parsley or cilantro for garnish.
