- 8 oz pasta (penne, fusilli, or spaghetti)
- 1 tablespoon olive oil
- 1 cup chorizo, sliced
- 1 cup chicken breast, diced
- 2 cups diced tomatoes
- 1 cup heavy cream
- 1 teaspoon chili powder
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro for garnish
Instructions
- Heat the olive oil in a large pot over medium heat.
- Add the sliced chorizo and diced chicken. Sauté for about 5-7 minutes until golden brown.
- Stir in the diced tomatoes, heavy cream, chili powder, garlic powder, salt, and pepper. Simmer for about 5 minutes.
- Toss in the cooked pasta, stirring to combine.
- Cook for another 8-10 minutes until the pasta is al dente.
- Add reserved pasta water if the sauce is too thick.
- Serve hot, garnished with chopped cilantro.
Notes
For added heat, toss in red pepper flakes when adding spices. Make ahead the sauce and store in an airtight container.
