Description

A creamy pasta dish featuring chorizo and chicken, balanced with tomatoes and spices for a comforting meal.


Ingredients

  • 8 oz pasta (penne, fusilli, or spaghetti)
  • 1 tablespoon olive oil
  • 1 cup chorizo, sliced
  • 1 cup chicken breast, diced
  • 2 cups diced tomatoes
  • 1 cup heavy cream
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Instructions

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the sliced chorizo and diced chicken. Sauté for about 5-7 minutes until golden brown.
  3. Stir in the diced tomatoes, heavy cream, chili powder, garlic powder, salt, and pepper. Simmer for about 5 minutes.
  4. Toss in the cooked pasta, stirring to combine.
  5. Cook for another 8-10 minutes until the pasta is al dente.
  6. Add reserved pasta water if the sauce is too thick.
  7. Serve hot, garnished with chopped cilantro.

Notes

For added heat, toss in red pepper flakes when adding spices. Make ahead the sauce and store in an airtight container.
