Delightful muffins with the flavors of churros, filled with dulce de leche and coated in cinnamon sugar.
Ingredients

- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup sugar
- 1/2 cup unsalted butter, melted
- 1 large egg
- 1/2 tsp vanilla extract
- 1/2 cup milk
- 1/2 cup dulce de leche or caramel sauce
- 1/4 cup sugar (for coating)
- 2 tsp cinnamon (for coating)
Instructions
- Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
- Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
- Mix melted butter and 1/2 cup of sugar until creamy in another bowl.
- Add the egg and vanilla extract to the butter mixture and whisk until combined.
- Gradually combine the dry ingredients with the wet ingredients, alternating with milk. Mix gently.
- Fill each muffin cup halfway with batter, add a dollop of dulce de leche, then cover with more batter.
- Bake for 15-18 minutes until a toothpick comes out clean.
- Combine the remaining sugar and cinnamon in a separate bowl and roll the warm muffins in it.
Notes
You can prepare the batter a day in advance and store it in the refrigerator. For a quicker option, use an air fryer at 300°F for about 10 minutes.
