Description

Delightful muffins with the flavors of churros, filled with dulce de leche and coated in cinnamon sugar.


Ingredients

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup sugar
  • 1/2 cup unsalted butter, melted
  • 1 large egg
  • 1/2 tsp vanilla extract
  • 1/2 cup milk
  • 1/2 cup dulce de leche or caramel sauce
  • 1/4 cup sugar (for coating)
  • 2 tsp cinnamon (for coating)

Instructions

  1. Preheat your oven to 350°F (175°C). Line a muffin tin with paper liners.
  2. Whisk together the flour, baking powder, baking soda, and salt in a medium bowl.
  3. Mix melted butter and 1/2 cup of sugar until creamy in another bowl.
  4. Add the egg and vanilla extract to the butter mixture and whisk until combined.
  5. Gradually combine the dry ingredients with the wet ingredients, alternating with milk. Mix gently.
  6. Fill each muffin cup halfway with batter, add a dollop of dulce de leche, then cover with more batter.
  7. Bake for 15-18 minutes until a toothpick comes out clean.
  8. Combine the remaining sugar and cinnamon in a separate bowl and roll the warm muffins in it.

Notes

You can prepare the batter a day in advance and store it in the refrigerator. For a quicker option, use an air fryer at 300°F for about 10 minutes.
