Description

A rich and creamy side dish made with tender spinach enveloped in a velvety sauce, perfect for any occasion.


Ingredients

  • 2 pounds fresh spinach (or 1 pound frozen spinach)
  • 2 tablespoons butter
  • 2 tablespoons all-purpose flour
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1/2 teaspoon garlic powder
  • Salt and pepper to taste
  • Nutmeg (optional)

Instructions

  1. Wash fresh spinach under cold water to remove any grit, then chop into bite-sized pieces. For frozen spinach, thaw it and squeeze out excess moisture.
  2. Melt the butter in a large skillet over medium heat until it starts to bubble gently.
  3. Sprinkle in the flour, stirring vigorously with a wooden spoon for about one minute until it turns a light golden brown.
  4. Whisk in the heavy cream gradually, stirring continuously to avoid lumps until it thickens into a silky sauce.
  5. Sprinkle in garlic powder, salt, and pepper, mixing thoroughly. Add nutmeg if desired.
  6. Fold in the spinach and cook for 2-3 minutes until it absorbs the creamy goodness.
  7. Stir in the grated Parmesan cheese until melted and well combined.

Notes

Make-ahead: Prepare a day in advance and reheat gently. For a healthier option, use half-and-half instead of heavy cream.
