Description
A rich and creamy side dish made with tender spinach enveloped in a velvety sauce, perfect for any occasion.
Ingredients
Scale
- 2 pounds fresh spinach (or 1 pound frozen spinach)
- 2 tablespoons butter
- 2 tablespoons all-purpose flour
- 1 cup heavy cream
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
- Nutmeg (optional)
Instructions
- Wash fresh spinach under cold water to remove any grit, then chop into bite-sized pieces. For frozen spinach, thaw it and squeeze out excess moisture.
- Melt the butter in a large skillet over medium heat until it starts to bubble gently.
- Sprinkle in the flour, stirring vigorously with a wooden spoon for about one minute until it turns a light golden brown.
- Whisk in the heavy cream gradually, stirring continuously to avoid lumps until it thickens into a silky sauce.
- Sprinkle in garlic powder, salt, and pepper, mixing thoroughly. Add nutmeg if desired.
- Fold in the spinach and cook for 2-3 minutes until it absorbs the creamy goodness.
- Stir in the grated Parmesan cheese until melted and well combined.
Notes
Make-ahead: Prepare a day in advance and reheat gently. For a healthier option, use half-and-half instead of heavy cream.
