Description

A heartwarming crockpot dinner featuring tender chicken, vibrant vegetables, and smoky barbecue sauce.


Ingredients

  • 2 pounds of skinless, boneless chicken breasts
  • 1 cup of barbecue sauce
  • 1 cup of corn
  • 1 cup of black beans
  • 1 onion, chopped
  • 1 bell pepper, chopped
  • Salt and pepper to taste
  • Chopped cilantro for garnish

Instructions

  1. Layer the chicken in the bottom of your crockpot.
  2. Add the barbecue sauce over the chicken, ensuring each piece is coated.
  3. Toss in the corn, black beans, chopped onion, and bell pepper.
  4. Season with salt and pepper.
  5. Cover and cook on low for 6-8 hours or on high for 4 hours.
  6. Shred the chicken using two forks in the pot.
  7. Mix everything together and garnish with chopped cilantro.

Notes

Feel free to prep vegetables the night before and refrigerate. For alternative cooking methods, use an air fryer at 375°F for 25-30 minutes or roast in the oven for 45 minutes.
